Crew means staff to run the vehicle, not carried troops. AT-AT carries up to 40 troops plus 5 crew. Star Destroyer crew is about 37000, often split as officers plus enlisted. Super Star Destroyer crew is about 280000. Death Star crew is 1.1 to 1.2 million per 2021 Inside Intel. Older books list higher totals near 1.7 million. Those older totals are noted in the Death Star entry. Droid co-pilots are not counted as crew.

No. Crew is 1 pilot. The astromech is a droid co-pilot per Databank and is listed apart in the note.
